In the hustle-bustle of our life, we often don't get time to prepare elaborate dinner for our family. Or sometimes, we need a break from the routine and crave for something different and refreshing in our dinner. And, that’s when easy-peasy and feel-good recipes come to our rescue. Quinoa Khichdi
A dish where healthy meets spicy is undoubtedly quinoa khichdi. You will need an equal quantity of quinoa, sweet corn, black beans, and a little more water. In the spices, you will need coriander seeds, cumin powder, chili powder, turmeric, salt, and some oil/butter to cook.
Start with cooking quinoa with water in a saucepan and meanwhile, in another pan, heat butter to prepare the seasoning.
Corn Capsicum Pasta
Corn and capsicum pasta is a real steal-deal for dinners as it is super quick and fuss-free. The best part is you can make this within half an hour and satiate your hunger on the go as well.
For the dish, boil pasta of your choice (preferably macaroni) in a large vessel. Add butter in a separate pan. Add all-purpose flour to it and keep on stirring to keep it from lump formation. Add some milk to it and keep stirring until a thick sauce is formed. Next, add salt and your favourite seasoning to it. Let it cook for 5 minutes and add chopped capsicum & boiled corn.
In the end, add pasta to it and combine everything well. Your corn pasta is now ready! Alternatively, many pasta suppliers in India provide 5-minutes pasta, and you can try them when you are really short of time.
Bread Uttapam
This uttapam is not only delicious but nutritious too. All you need is a mix of finely chopped tomatoes, onions, cabbage, and green chilies for the stuffing and some curd and bread for preparing the batter. Churn bread with some curd in a mixer grinder to make a nice and smooth batter. When done, add some salt to it, and the mix of veggies prepared earlier.
Now, put a pan over medium flame and grease it with little oil. Spread the mixture on it to make a thin layer. Let it cook on one side and flip to bake another side. Serve it hot with chutney or dip of your choice.
Lemon Rice
Lemon rice is very popular in the Southern part of India, and you can prepare it quickly with minimum ingredients under 20 minutes. Your dinner is sorted if you even have some left-over rice.
Take a pan and heat some oil in it. When done, add mustard seeds, curry leaves, red chilies, peanuts, and stir fry them until you get a pleasant aroma. Add rice, salt, and turmeric powder and stir to combine everything well. Squeeze in some lemon juice and you are done.
